Sisig Tacos

Serves 12 

Total Time: 1.5 hours

Ingredients

For the sisig

¾ kilo pig face and ears (maskara), cleaned and boiled*

1 tablespoon vegetable oil 

2 white onions, chopped

2 siling pangsigang (green), chopped

¼ kilo chicken liver, chopped**

2 tablespoons soy sauce

½ teaspoon pepper

Juice from 3 calamansi

½ cup mayonnaise 

2 teaspoons soy sauce

½ teaspoon pepper

12 taco shells 

½ head lettuce, shredded***

2 tomatoes, chopped

2 red onions, chopped

Procedure

1. Make the sisig: Grill pig face over charcoal or fire just until charred. Chop into small pieces.

2. Heat oil in a pan over medium heat. Saute onions and siling pangsigang until fragrant. 

3. Add liver and cook until browned. Add chopped pig face and stir. 

4. Add soy sauce, pepper, and calamansi. Mix well. 

5. Combine mayonnaise, soy sauce, and pepper in a bowl.

6. Assemble tacos: Fill a taco shell with sisig. Top with lettuce, tomatoes, and onions. Drizzle with mayonnaise mixture, if desired. Serve immediately. 

Tips

*Wais tip: Siguraduhing ang baboy na bibilhin ay may halo rin na karne at hindi lamang puro taba. Kung mas matagal lutuin ang baboy, matutunaw ang taba nito at oonti ang dami ng iyong produkto. 

**Tipid tip: Magdagdag ng atay bilang extender sa iyong sisig. Dagdag panlasa din ito! 

***Wais tip: Maliban sa lettuce, maaari ring gumamit ng repolyo o iba pang salad greens na mas mura sa palengke.
